Food Friday – Spring Berry And Citrus Salad

Spring Berry Citrus Salad

There is an old Sunday school song that I have been singing lately.

It is summertime joy in my heart
It is summertime joy in my soul
When Jesus saved me the life he gave me
When it is winter it is summer in my heart

Spring tried but it has not yet sprung. It feels like fall here in Vancouver, we keep waiting for the weather to turn so we can change over to our spring / summer clothing and shoes. For now we occasionally have to turn on the heater and I find myself singing the old Sunday school song in hopes of capturing a summer like feeling in my heart.

We made this salad a couple of weekends ago desperately evoking spring and summer. Our local British Columbia berries are a few weeks away however, Whole Foods Market has plenty of California berries. We picked up some berries, a bag of mixed greens and a few other ingredients that had us eating like it is summer; even if it looked dreary outside.

Spring Berry Citrus Salad

INGREDIENTS

6oz of mixed greens
1 cup of fresh sliced strawberries
½ cup fresh blueberries
1 tangerine peeled and separated
¼ cup of sundries tomatoes
¼ cup of pecans

Vinaigrette Dressing

¼ cup of freshly squeezed lemon juice
¼ cup extra virgin olive oil
2 tablespoons balsamic vinegar
½ teaspoon kosher salt
¼ teaspoon black pepper

DIRECTIONS

Place the lemon juice, balsamic vinegar, olive oil, salt and pepper in a mason jar and shake vigorously till emulsified. Combine greens, berries, tangerine and sundried tomatoes in your serving bowl. Just before serving, top with pecans and vinaigrette to taste.
